Abstract
This study was carried out to evaluate the effect of the various nanochitosan coatings on fresh eggs' quality based on the interior quality and sensory evaluation during 30 days of storage at room temperature. Fresh eggs were coated with nanochitosan 0,4% maintained their A-grade quality for 15 days. However, noncoated eggs rapidly changed from AA to B grades after 5 days at room temperature. Besides, other quality indicators of eggs were lower than noncoated eggs when stored at normal temperature. The results of the experiments demonstrated that nanochitosan coatings improved the shelf life of fresh eggs.
